### Cooking Method
1. **Preparation:**
- **Bring to Room Temperature:** Take the beef joint out of the refrigerator about 30-60 minutes before cooking to allow it to reach room temperature. This helps it cook more evenly.
- **Preheat the Oven:** Preheat your oven to 375°F (190°C).
2. **Seasoning:**
- **Season the Meat:** Rub the beef joint with olive oil or melted butter. Generously season with salt and pepper. You can also add minced garlic and fresh herbs for extra flavour.
3. **Searing (Optional):**
- **Sear the Joint:** For an enhanced flavour and crust, you can sear the joint in a hot skillet with a little oil for a few minutes on each side until browned before roasting. This step is optional but recommended.
4. **Roasting:**
- **Place in Roasting Pan:** Transfer the beef joint to a roasting pan, fat side up. This allows the juices to baste the meat as it cooks.
- **Roast in the Oven:** Roast the beef in the preheated oven. Cooking time will depend on the size of the joint and the desired doneness. As a general guideline:
- Rare: 20 minutes per pound (about 45 minutes for a 2.5 lb joint)
- Medium-Rare: 25 minutes per pound
- Medium: 30 minutes per pound
- Well Done: 35 minutes per pound
5. **Check Temperature:**
- **Use a Meat Thermometer:** Insert a meat thermometer into the thickest part of the joint (avoiding the bone) to check the internal temperature:
- Rare: 125°F (52°C)
- Medium-Rare: 135°F (57°C)
- Medium: 145°F (63°C)
- Well Done: 160°F (71°C)
6. **Resting:**
- **Rest the Meat:** Once the desired temperature is reached, remove the beef from the oven and cover it loosely with aluminium foil. Let it rest for 15-20 minutes. Resting allows the juices to redistribute within the meat.
7. **Slicing and Serving:**
- **Slice the Beef:** After resting, slice the beef against the grain to ensure tenderness. Serve with your choice of sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
### Tips
- **Basting:** You can baste the beef with its own juices a couple of times during roasting for added moisture and flavor.
- **Gravy:** Use the drippings from the roasting pan to make a delicious gravy.
- **Leftovers:** Leftover roast beef can be used in sandwiches, salads, or stir-fries.
