Peppered Steaks

#### 1. Prepare the Steak
- **Bring to Room Temperature:** Take the steaks out of the refrigerator about 30 minutes before cooking to allow them to come to room temperature. This helps them cook evenly.


#### 2. Cook the Steak
- **Heat the Pan:** Heat a large skillet over medium-high heat. Add olive oil or butter. The pan should be hot enough that the oil shimmers but doesn't smoke.
- **Sear the Steaks:**
- Place the steaks in the hot skillet. Cook for about 3 minutes on one side without moving them, until a nice crust forms.
- Flip the steaks and cook for an additional 3 minutes for medium-rare, adjusting the time based on your desired doneness (about 130°F/54°C for medium-rare, 140°F/60°C for medium).

#### 3. Rest the Steak
- **Remove and Rest:** Once cooked to your liking, remove the steaks from the skillet and place them on a cutting board or plate. Cover loosely with aluminium foil and let them rest for about 5-10 minutes. This allows the juices to redistribute. Enjoy!
